CHAP CHYE (MIXED VEGETABLES STEW)

Ingredients :

2 potatoes - cleaned and quartered
Carrots - sliced
dried lily buds
black fungus
glass noodles
bean curd sticks
1 piece chicken cube
fresh ginger - sliced
shallots
garlic - chopped

To garnish :

scallion - diced
fresh red chillie - diced

Method :

1. Soak dried lily buds, black fungus, glass noodles and bean curd stick in individual bowls of water. When softened, drain the water and squeeze out excess water. Cut to smaller pieces.
2. Heat oil in a pot. Stir fry sliced shallots, chopped garlic and ginger till fragrant.
3. Add in potatoes. Stir for a while then pour enough water into the pot. Add in the chicken cube.
4. When the potatoes are half cooked and the soup is boiling, add in the carrots, lily buds, black fungus, glass noodles and bean curd sticks.
5. Add in salt if necessary. Once cooked, remove from heat.
6. Before serving, sprinkle with some diced scallions and fresh red chillie. Serve with steamed rice.

When baking or even when doing anything, you have to focus and also, the confident level musn't be too high. When I prepared this cake I was slightly focus and too confident! Hence, blunders! The recipe calls for all ingredients to be measured by cups. And I confidently took a small measuring cup since my 1 CUP measuring cup is always in the flour container. Thinking that I took the 1/4 cup measuring cup (it does look like one!) and without checking, I started to measure the sugar. 4 scoops went into the bowl. Then the cocoa powder. After 2 scoops of cocoa powder went into the bowl, I decided to look at the cup and it stated there 1/3 CUP!!! Hohoho.... what do I do now?? To remove the cocoa powder and sugar, it is just not possible. So then, I decided to just keep on pretending that I am using a 1/4 CUP measuring cup! Yeay, happily I measured all the ingredients, assuming I didn't do any blunders. And I added an extra egg into the recipe, making it 4 eggs instead of 3. And the rest... I just leave everything to Allah. Tawakkal!

Alhamdulillah, the cakes turned out good. My daughter brought back a friend for sleepover and they were my food testers for that day. The way they enjoyed their piece, tells it all. I sent my cake photos to my cousin, Nora together with the recipe and she tried it straight away, using the correct measuring cup of course... and she said it was delicious!

SIMPLE STEAMED CHOCOLATE CAKE

Ingredients :

1 cup sugar
1 cup cocoa powder
1 cup evaporated milk (I used Ideal)
1 cup cooking oil (I used Naturel Corn Oil)
1/2 cup condensed milk (I used SAJI brand)
3 eggs (beat till light and fluffy)
1 cup self-raising flour (use 3/4 cup flour if you want your cake to be more moist)

Method :

1. In a bowl, add in sugar, cocoa powder, evaporated milk, oil and condensed milk. Mix well and cook on slow fire using double boil method. I used a whisk to stir. Once melted, remove from heat and leave to cool.
2. Once cooled, add in the eggs. Mix well.
3. Fold in the flour.
4. Pour into the baking tin. Cover the tin with aluminium foil.
5. Steam for 45 minutes.
6. Remove from steamer and let it cool.

Topping :

1 cup cooking chocolate
2 tablespoons margarine (I used Planta)
1/2 cup condensed milk (I used SAJI)



Method :

Combine all the ingredients for topping in a pot and cook on slow fire using double boiler method. Stir till all the ingredients melted. Let the cake cool completely before pouring the topping. Decorate as you wish. I piped mine with a bit of fresh cream and sprinkle with some grated cooking chocolate.

Rice Fritters


JEMPUT-JEMPUT NASI (RICE FRITTERS)

Ingredients :

1 cup leftover rice
3 shallots - sliced
2 tablespoons dried anchovies (soaked)
1/2 Holland onion - diced
1 fresh red chillie - diced
spring onions - chopped
salt to taste
1/2 teapsoon baking powder
enough flour
enough hot water

oil for frying

Method :

1. Place rice, shallots and achovies with a enough plain water. Blend till fine.
2. Pour the mixture into a bowl. Add in diced onion, red chillie, spring onion and salt. Mix well.
3. Fold in flour and baking powder. Bater should be slightly thick.
4. Heat oil. And using your fingers, scoop the bater and drop it into the medium heat oil. Other option, you can also use your icecream scoop to do the job *wink*.
5. Fry till golden brown. Remove the rice fritters onto a kitchen towel.
6. Ready to serve with chillie sauce. Psst... I had mine with sandwich mayo!

Sunquick Orange Cupcakes (A keeper)

SUNQUICK ORANGE CUPCAKES

Makes 30 cupcakes

Ingredients :

3g salt (I omit)
225g butter (I used Planta margarine)
400g castor sugar
4 eggs, room temperature
2 teaspoons vanilla essence
1/2 teaspoon orange oil (I added)
2 tablespoons sunquick orange
375g self-raising flour - divided into 3 portions
235 ml full cream milk (Dutch Lady) - divided into 2 portions

Topping :

Whip cream (I used Value Pride)



Method :

1. Preheat oven to 375 degrees F (190 degrees C). Line 30 cupcake pan cups with paper liners.
2. Sift the self-rising flour and salt together in a bowl. In another bowl, beat the margarine and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, beating each egg until incorporated before adding the next. Mix in the vanilla essence, orange oil and sunquick orange.
3. Gently fold in the flour mixture into the margarine mixture, alternating with the milk, starting and ending with flour. Beat until just combined; do not over mix.
4. Fill the prepared cupcake liners with batter 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 17 minutes. Let the cupcakes cool in the pans for about 10 minutes before removing them to finish cooling on a rack.
5. For the topping, I used whip cream. Pipe onto the cupcakes and decorate as you please.

Kuih Pau (Fieyza Fadlina)

Ingredients :

2 1/2 cups pau flour (I used multipurpose flour)
1 teaspoon baking powder
3/4 tablespoon instant dried yeast (I used mauripan)
1/2 teaspoon sugar
1 tablespoon bread softener (optional. I didn’t put)
2 tablespoons vegetable shortening (optional. I add in)
1 tablespoon cooking oil
enough water
greaseproof paper or banana leaves cut to small squares

red bean paste



Method :

1. In a big bowl, place the flour, yeast and sugar.
2. Pour in water, a little at a time and knead. Add in shortening and cooking oil.
3. Continue kneading till you get a soft and shiny dough. Approximately after 25 minutes kneading by hand.
4. Make the dough into a ball and let it rest for 10 minutes.
5. Divide the dough into small portions.
6. Flatten the dough, place the filling in the middle and gather up the edges to seal the filling.
7. Place the pau on a piece of greaseproof paper and arrange in the steamer.
8. Do the same to the remaining portions.
9. Steam the pau over rapid boiling water for 10 minutes.

Note to Yours Trully.... Knead these pau by hand! Perghhh cayalah mama!!! Didn't know I can actually do it! Hahahaha....

Apple Cake

APPLE CAKE

Ingredients :

3 granny smith apples (I used red apples)
1/2 teaspoon cinnamon powder
1 cup butter (I used Planta Margarine)
1/2 cup castor sugar
1/2 cup brown sugar
1/2 teaspoon vanilla essence
4 eggs
1 3/4 cups flour
1 teaspoon baking powder

Method :

1. Peel the apples and slice thinly. Coat the apples with cinnamon powder and arrange half of it at the bottom of your pan (greased). I’ve used my silicon mould, so greasing is unnecessary.
2. Place the remaining ingredients in a food processor and switch it on, till the mixture is well combined.
3. Pour half the batter over the apples.
4. Arrange the remaining apples on top and pour the rest of the batter into the pan.
5. Bake in a preheated oven at 170 C for an hour or till a skewer inserted into the cake comes out clean.
6. Leave to cool and ready to serve.

Ketam Sambal Bersantan (Crab Sambal with coconut milk)

I thought I am not going to write anything in the Ramblings section. But then, I changed my mind. I just had to write something... or rather... I had to let out what I am feeling at the moment. I AM FRUSTERATED actually. I browsed through my blog, trying to look for something, but what did I find... yeah, lots and lots of entries without photos but only the 'exclaimation mark' thingy on it's place. Not that I am not aware of that situation, but I didn't realise there are so many and I am not sure whether I still have them in my folder. Huwaaaa.... But In Shaa Allah I will try my best to upload whatever's left.....

KETAM SAMBAL BERSANTAN

Ingredients :

6 pieces crabs - clean and wash
6 shallots
2 cloves garlic
1 inch ginger
1 inch fresh turmeric
3 tablespoons chillie paste
2 tablespoons tamarind juice
1/2 cup thick coconut milk
enough water
salt and sugar to taste
zeal - optional
1 piece turmeric leaf
cooking oil

Method :
1. Mince shallots, garlic, ginger and fresh turmeric.
2. Heat oil in a heavy skillet. Add in the minced ingredients. Fry till fragrant. Add in the chillie paste. Stir for another 3 minutes.
3. Add in tamarind juice. Add in coconut milk and enough water. Let it boil, then add salt, sugar and zeal to taste.
4. Add in the turmeric leaf and the crabs.
5. Simmer for a while till the crabs are cooked and remove from heat. Ready to serve.

This is my mom's lunch, together with this....

Eggless Moist Banana Brownies

My my....the weather today is just soooo nice today! Nice as in raining the whole day and making all eyes so droopy. It is supposed to be the best time to snuggle in bed, with a book in your hand, or just turned on the television. And after like less than 10 minutes, it will be either the book's reading you or the television's watching you. Hahaha...

But hey, I am quite impressed with myself! I was as busy as Mrs Bee since I opened my eyes in the morning. When hubby left for work, as early as 6.15am (the office is not that far but he went early to avoid the traffic jam and also to secure a parking place), I began to make these...



While waiting for the buns to bake, I tried baking the brownies that I had eyed at Along Roz's blog. And at the same time, I was busy taking photos and whatsapping a friend and a few family members and made their lives miserable with the photos I took. Hahaha... sorry you gals, I meant well okay. Take it as a MOTIVATION and not TORTURE okay, Nora, Mak Chu and Ibu Nor! Hahaha.. love you gals... muaahhhh....

Note to Along Roz : ... how come my brownies doesn't look as nice as yours? Huwaaaaaa... huwaaaaa.....

EGGLESS MOIST BANANA BROWNIES

Ingredients :

200g cooking chocolate
150g Butter (I used margarine)
400g ripe bananas - mashed
120g brown sugar
1/s teaspoon salt
2 teaspoons Vanilla Essence
150g plain flour*
4 tablespoons cocoa powder*
1 teaspoon bicarbonate Soda*
1 teaspoon baking powder* (*sifted together)
enough Chocolate Chips - to sprinkle

Method :

1. Melt chocolate and butter together. Allow to cool.
2. Add in mashed banana, sugar, salt and vanilla essence - mix well each addition.
3, Fold in sifted ingredients*. If too thick, add in 4 tablespoons fresh milk.(OMG! I didn't read this! So I didn't add any but luckily it is still okay!)
4. Line a 10" x 10" baking tray with greaseproof paper. Pour batter into the tin.
5. Sprinkle some choc chips.
6. Bake at 170C for 30 minutes or until done.
7. Slice and serve.

Beef Pepperoni and Olives Pizza

Hello everyone. It is past 11pm now. I am totally exhausted now. Mentally and psychically. And I am so looking forward to jump on my bed right now. But since I’ve promised myself to upload an entry today, I mustn’t break my promise.

Why am I psychically tired? Well today, I cooked Asam Pedas for lunch and dinner. Fatin had whatsapp me in the morning, saying that she’s coming home this afternoon after her class, just to release some stress. She had asked dearest mom to cook for her Asam Pedas and bake a pizza. Hmmm.. now who is starting to be stressed? Hahaha… just kidding! So mom, happily went into the kitchen, totally forgetting about her plan to do ironing.

Firstly, I cooked for Mr Hubby, Asam Pedas Ikan Parang. Done with that, I started to cook Asam Pedas Ikan Tenggiri for Fatin. While waiting for the mixture to cook, I went out to bring in the laundry, not realising that I didn’t put the fire on low. Hmmm I think, all of you can surely guess what happened then right. Yeahh… it got burnt! I had to prepare the ingredients again. Oh ohhh… this time, I can’t find the tamarind. I am pretty sure I had a new packet unopened. I went through the cupboards but couldn’t find it… up to a stage, I said to myself, if that packet decided to show itself after this, I will send is straight to the bin! Hahahaha…. I had to walk to the shop and get a packet of tamarind. Today is just not my day I guess!

Fatin wanted to go to Giant to get some stuff to bring back to her apartment. But I was expecting the LG Technician to come and fix our refrigerator at 3pm. When he didn’t turn up after 4pm, I gave a call to his office. And the lady said, Mr Technician wrote in the schedule, “after 7pm”. So I told Fatin, once I’m done in the kitchen, we’ll go to Giant. Luckily we haven’t leave the house because Mr Technician came at 4.45pm. It seems, the fan’s motor is not working well and had to be replaced.

Now… the mentally exhausted part…

Hubby bought a new iMac for me to use because the laptop that I am using is quite old and it is showing the ‘ageing sign’. Hahahaha… Well, you know, when things are new, we need time to meddle around to get use to it. I don’t really have much time to sit around and meddle. So, every time he is not around, I will turn on my antique laptop and will turn it off after using, before he knew it. Yeah yeah… naughty me, I know! But today, since I was busy the whole day… I had forgotten to turn off the laptop and who has to go into the computer room??? Oh yes, Mr Hubby. He didn’t say much, just one short, direct question…. MAMA, YOU ARE NOT USING THE IMAC? And dear mama started to have shaky knees! Muahaha… serves her right!

Anyway, she’s not 100% naughty okay. This entry was drafted and posted using the iMac fully. But only Allah knows what a hard time I was having just now. Practise makes perfect though. I am pretty sure, I won’t take that long to get use to this fella… *wink*

Oh me oh my, and somebody said she is mentally and psychically tired, but here she is, writing her Grandmother Story! Hahaha… MamaFaMi will always be MamaFaMi…

BEEF PEPPERONI AND OLIVES PIZZA

Ingredients :

For the base :

2 cups bread flour
1 teaspoon instant dried yeast (I used mauripan)
1 teaspoon milk powder (I used omega)
1 teaspoon castor sugar
1/2 teaspoon salt
1/4 teaspoon bread softener (I used bread improver, same amount)
165ml water (I think the amount should be less)
1 tablespoon cooking oil (I used extra virgin olive oil)

For the Topping :

Spagetti sauce in the bottle (I used Kimball traditional)
Beef pepperoni (Prima Brand)
Black olives
Mozarella cheese


Method :

1. Place all the ingredients for the base except olive oil, in a mixer bowl with dough hook attached. Turn on the mixer. Once the wet and dry ingredients incorporate, add in the olive oil. Continue kneading till a soft and shiny dough is formed. Make the dough into a big ball and place in a bowl, covered. Let the dough rise.
2. Punch the dough to release the air and roll to the thickness you wish.
3. Place on dough on a baking tray.
4. Prick the surface with a fork.
5. Grate some cheese onto the dough.
6. Spread the spagetti sauce on top.
7. Arrange the pepperoni on the sauce.
8. Arrange the olives on top of the pepperoni.
9. Grate with mozzarella cheese.
10. Bake for 25 to 30 minutes or till done.

Roti Paun Lembut - A KEEPER

How should I feel, when I hear someone said that I have not been forgotten despite the VERY slow updates in my blog, the vanishing act that I've performed on FB world and the way I hide myself from the real world.. well frankly speaking, I'm trully touched. Trully trully trully....

It really touched my heart when I read what Kak Wan Nita of Fadelicious Cakes wrote when we were whatsapp-ing yesterday night. Anyway I will not reveal our conversation and will keep it to myself. Something that can perhaps boost my mood to update more often, In Shaa Allah...

To be frank, I've always have doubt about myself... about the things that I posted in my blogs... about the recipes that I've tried... Well, to me, I can't find anything fantastic in these blogs of mine. The only thing that I've always been proud of showing...hok aloh, cam riak je bunyi dia kan? Eh mama bukan riak ok.. bangga je sikit... tak salah kan? are the photos of my brownies. Hahahaha... and most of the time, it is the same recipe!! Kak Wan said, maybe it's my mindset! How can I reset? Huhuhu...

I'm taking this opportunity to thank all my visitors, followers (if there's any) and friends for all your support. In Shaa Allah MAMAFAMI's BLOG will stay 'alive', even if the owner is no longer in this world. If it is not much to ask, please recite Al-Fatihah for me whenever I cross your mind. ROTI PAUNG LEMBUT

Ingredients :

500g high protein flour
50g milk powder
250ml chilled water
11g instant dried yeast (I used Mauripan)
120g castor sugar
a few drops of yellow food coloring
100g margarine


Method :

1. Gease all the baking tins thoroughly. I used vegetable shortening. Keep aside
2. Place all ingredents except margarine in a mixing bowl.
3. Fasten the dough hook onto the mixer and start kneading.
4. Once the ingrediets have just combined, add in the margarine. Knead till a soft and shiny dough is formed.
5. Remove from the bowl and rest the dough for about 10 minutes.
6. Divide the dough into a 27g balls. Shape it nicely and arrange in the prepared tins.
7. Cover the tins and leave the dough to rise till almost double the size.
8. Mix a bit of milk powder with a bit of water and brush lightly on top of the dough.
9. Bake in a preheated oven at 160 C for 15 to 20 minutes. Oven temperature and baking time may vary, depending on your oven.
10. Once baked, remove from the oven and onto a wire rack to cool.

Yesterday, I experimented a new recipe. All because I felt sorry for my neighbour who tried making this kuih but the kuih didn't turn out nice and she's in a sulk.. The husband likes this kuih and she had hoped she'd be able to serve him the homemade ones.

So in order to not let her spirit of experimenting goes down the drain, I had tried making the kuih for her, but using a different recipe. And Alhamdulillah, I don't really have to sulk with the outcome, though, a lot has yet to be improved.

I passed to her the 'just-out-of-the-steamer' kuih with a message... "I am going to write this in my blog when I post this recipe NEVER JUDGE THE FOOD BY THE LOOK!"

And that is exactly what I am going to write here....

Though the look is not so inviting, but the taste is just yummylicious or if I were to write in Bahasa Malaysia... Walaupun rupamu herot berot, rasa mu tetap menjadi pojaan hatiku... hihihi...

KUIH APAM

Ingredients :

(A)
11g instant dried yeast (I used Mauripan)
1/2 cup lukewarm water
1 teaspoon sugar

(B)
500 g flour - sifted
3/4 cup sugar
2 cups water
a few drops of food coloring of your choice

(C)
Freshly grated coconut (just the white part)
a bit of salt

Method :

1. Mix (A) and keep aside till the mixture bubbles.
2. Place ingredients (B) in a blender. Add (A).
3. Blend till mixture are smooth.
4. Grease the tray with a bit of oil. Pour the prepared mixture into the tray. Cover and let it rise for 30 minutes.
5. Prepare the steamer. Steam the apam mixture for 40 to 50 minutes.
6. Serve the kuih apam with freshly grated coconut mixed with a bit of salt.

Note :

I think I let my kuih apam mixture rise a bit too long. It dropped in the middle when done steaming. The original recipe said to let it rest for 45 minutes. I think 30 minutes should be okay. Good luck!

What's for Iftaar today?

In sha Allah, I am fasting today. So far so good, though I only had a small amount of food the day before. And I had two slices of bread for sehri, with a mug of milk tea and also my medication. Alhamdulillah I am good.

Hmm, now what shall I have for Iftaar today? Any ideas?

Well, I had this for Monday's Iftaar....

Hish...don't let people make any speculations about the above statement, Mak Teh. I am not a writer... or otherwise I would have produced better 'stories' in this humble column of mine. ;) Hahahaha

Ingredients :

Bottom layer
2 cups glutinous rice - washed and soak for 3 hours
2 1/4 cup thin coconut milk
salt to taste

Method :
Mix together the above ingredients and pour into a baking tin, layered with cling film. Steam for 20 minutes or till cooked. Cover the steamer's lid with towel to avoid water dripping into the tin.

Top layer

2 cups thick coconut milk
1/2 cup pandan juice + green food coloring
1/2 cup sugar
3 tablespoons custard powder
3 tablespoons flour
1 large egg
salt to taste

Method :

1. Mix all the ingredients together except sugar. Stir to mix and put through a sieve. Add sugar and continue stirring.
2. Gently pour the mixture onto the bottom layer and steam for another 30 minutes.
3. Remove from steamer and leave to cool.
4. Cut using a plastic knife and ready to serve.

Brownies for Jid

Assalamualaikum to all you lovely people out there...

Hmmm... shall I say, it's good to be back online? I think I should not say that because I am not so sure for how long I will be 'back on air' this time. Though I have quite a number of reasons why I should be back, but all narrowed down to the word L.A.Z.Y, hence the 'blog full of cobwebs'!!!

Not only I am lazy to update my blogs, but I was lazy to turn on my laptop. And to make things worst, I am even lazy to turn on my oven. My oven, my mixer and all my baking stuffs are having such a wonderful vacation I guess! Hahahahaha....

What have I been doing all these while? What else.... besides doing the housework, I spent most of my time reading... mmmm that's another story as well. Though I've read quite a number of books, there is also NO updates in my other blog.

So to conclude.... i will blame it on L.A.Z.Y... hehehe....

Anyway, these were the latest 'products' from my lukewarm kitchen. Thanks to Jid for making my oven warm again... hope you are happy with the brownies.

Lempeng Kelapa

To me, reading can sometimes be hazardous. I have just finished reading YANG MANIS by Marissa. It's a nice story of a lady with such determination to go for what she thinks is best for her. And as far as I could remember, I didn't shed a tear reading this book. This situation is very RARE when it comes to MamaFaMi. OMG OMG OMG... where have my soft feelings gone to?Huhuhu... But the feeling like wanting to punch someone on the face is there! Hahahaha.. oh thank God, I am still my usual ol' self! Hahahaha...

Oh well, that is not the hazardous part that I meant to say, it's the mention of food in the book that is hazardous especially to someone who is so lazy to be in the kitchen, like me! Huhuhu.. But luckily it was just a 'lempeng kelapa' (coconut pancake), which is quite effortless to prepare. And so, we had that for tea yesterday! Thanks to Marissa for the idea. My mom had a broad smle on her face when I served her the pancakes with the sambal. She had a second helping infact. Alhamdulillah....

LEMPENG KELAPA

Ingredients :

1 cup flour
1/2 teaspoon baking powder
3/4 cup freshly grated coconut
salt to taste
enough water

Method :

1. Sift flour and baking powder into a bowl.
2. Add in the grated coconut, salt and water. Mix well. Batter must neither be too thick nor too runny.
3. Heat a teaspoon of oil in a flat saucepan. Spoon some batter onto the saucepan and cover. Let it cook on one side then turnover the pancake so that both sides are nicely cooked.
4. Serve with granulated sugar or sambal.

Empress Breadmaker Manual and Recipe Booklet



I received an email from Zion Wong, asking me if I still have my Empress Bread Maker's recipe. And what a coincidence, I do have them and the best part is, I've already scanned them. I think I must have done that for Wafa before this. Thought of sharing the recipe manual here but I kept delaying. Starbucks Lemon Loaf

Ingredients :

1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 eggs, room temperature
1 cup sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
2 teaspoon lemon extract
1/3 cup lemon juice
1/2 cup oil
zest of one lemon

Glaze :

1 cup powdered sugar
2 tablespoons whole milk
1/2 teaspoon lemon extract


Method :

1. Preheat oven to 350 F. Grease and flour a 9 x 5 loaf pan.
2. In a large bowl, combine flour, baking soda, baking powder and salt.
3. In a medium bowl, combine eggs, sugar, butter, vanilla extract, lemon extract and lemon juice with a mixer until blended.
4. Pour wet ingredients into the dry ingredients and blend until smooth. Add oil and lemon zest and mix well.
5. Pour into loaf pan and bake for 45 minutes until toothpick comes out clean. (It took an hour in my oven). Remove from oven and pour glaze over it, then cool in pan on a rack.
6. Glaze - whisk to combine.

Lemak Cili Padi Daging Dengan Rebung

Assalamualaikum. I come in peace! Hihihihi....

I know that I have not been updating the blog for A WHILE. And yes, I had been receiving the same question for so many times from so many friends. I am touched. People do remember me.

Well, besides being lazy to update, the camera in my phone is not being nice to me. That actually puts me off. On top of that, I had forgotten where I put my camera! Huhuhuhu... macam dapat madu sepah dibuang je lagaknya kan... bila madu dah habis, dok mengais cari sepah balik semula... muehehehehe...

Apart from the technical problems, I am busy trying to reduce things in the house. And also, we had been doing quite a bit of travelling since my kids are no longer staying with us. So mama and ayah get the chance to travel... yeeeehaaa... I just love to travel. Though not that far but still, the chance to travel never fails to excite me.

In sha Allah I will try my best to update more often though the photos presented in my blog are just ordinary photos, nothing spectacular! But I am happy....


THE RECIPE


LEMAK CILI PADI DAGING DENGAN REBUNG

Ingredients :

500 g bamboo shoots, sliced thinly, washed and keep aside
200 g topside beef, sliced thinly, washed and keep aside
4 stalks lemongrass, bruised
1 litre thin coconut milk
3 dried tamarind skin
300 ml thick coconut milk
Salt and zeal to taste

To be minced :

1/4 cup bird eye chillie
5 shallots
2 garlic
1/4 inch fresh ginger
1 inch fresh turmeric root


Method :

1. Boil enough water in a pot and add in the sliced bamboo shoots till soft and put through a strainer.
2. In another pot, place the sliced beef, lemongrass and the minced ingredients. Add a bit of water. Boil till the beef is soft and add thin coconut milk.
3. When the gravy starts to boil, add in the soft bamboo shoots.
4. Add dried tamarind skin, thick coconut milk, salt and zeal to taste.
5. Simmer on low heat. Stir once in a while.
6. Remove from heat and ready to serve.
